Dorothy Culloty spent seven years carefully studying the cuisine and customs of Northern Laos and it shows in this definitive work. She begins with short descriptions of the local tribes in the area, skilfully illustrated with photographs by her husband Kees, followed by an excellent explanation of the Lao kitchen, meal traditions and a superbly explained and illustrated glossary of ingredients. The book is packed with nuggets of fascinating information throughout, from the delicious perfume of the giant water beetles mashed into jaew to the practical assembly of banana leaf packets. The recipes are fresh, light and so authentic, I was conveyed back to Luang Nam Tha when recreating them. Wild food is a primary feature of Lao cuisine and Culloty has managed to capture the essence of this, while still making the recipes accessible to those outside Laos. I can say with authority (I also wrote a book about Lao cuisine) that this book is an essential addition to your library and a pleasure to use and read.
