I've used more recipes out of "Michele Evans' Recipes for Beautiful Soup" than from any other of my two-shelf collection of cookbooks. My copy is a 1974 paperback that has disintegrated, in spite of my efforts at taping it back together again. I'd definitely buy the hardbound version if it didn't cost over a hundred dollars. Maybe I'll buy it anyway. If you love to make and eat soup, this is the `bible' of soups.
I've been looking through the pages I've still got, and the only changes I've ever made to any of Michele Evans' recipes is add an occasional dash of red pepper flakes (mainly for the sake of my husband, who burned out his taste buds on Thai food). I've still got the Table of Contents page, and the author divides her book into the following sections:
"Beautiful Soup" (`Ten Secrets of Superior Soupmaking,' `Utensils,' `Croutons,' and `Garnishes')
"Basic and Beautiful: Clear Soups" (such as Clam Consommé and Iced Tomato Bouillon)
"Breakfast Soups" (such as Oatmeal Date Soup and Scandinavian Fruit Soup)
"Soup as Soup" (such as Crabmeat Bisque, Fennel Soup, and Tomato Basil Soup)
"Soup as a Main Course" (such as Chicken Vegetable Soup and Garbure--two of my very favorites)
"Dessert Soups" (such as Mocha Cream Dessert Soup and Lemon Banana Soup)
"Classic Soups" (such as Minestrone, Pot au Feu, and Russian Borscht)
"Exotic Soups" (such as Coconut and Lobster Soup and Chestnut Soup)
"Short-Method Soups" (such as Black Bean Suzanne and Cottage Cheese Soup)In the Old Testament of the Bible, Esau sold his birthright to Jacob for a bowl of red lentil soup. You might think of doing the same for a copy of this book--by the way, it's got a recipe for "Esau's Red Lentil Soup." It may not be the original recipe, but it is to die for.
