S.O.U.P.S.: Seattle's Own Undeniably Perfect Soups Review

S.O.U.P.S.: Seattle's Own Undeniably Perfect Soups
Average Reviews:

Hopvine has some of Seattle's best lunches, in my opinion, with hearty, healthy sometimes-vegetarian fare that goes way WAY beyond "pub food." The seasonal wasabi spring salad is to die for, and the artichoke/gouda sandwich is fantastic. Don't get me started on the soups: the amazing chilled strawberry soup in the summer, the creamy potato leek with lavender in the winter, the miso soup that's more like a meal.
And now, imagine my delight to see that Hopvine's chef, Michael Congdon, has released a whole book full of his amazing soups! Michael has an amazing concept of taste...once, when I sat by myself sipping his vichyssois, he came by my table and whispered conspiratorially "the taste will really pop with a little of this hot sauce." I do not like hot sauce. I lean towards un-spicy food and had never (seriously: NEVER EVER) added hot sauce to anything. But the way Michael suggested it, I figured I'd give it a shot. Just a tiny little dot of hot sauce on the top of the cold, creamy soup. And that tiny dot totally transformed the soup. There were many more dots after that, and I learned to trust Michael's advice absolutely.
And now there's this book! The whole first chunk is all about spices and tools, and might seem old hat for experienced chefs, but for culinary dullards like myself, it's sheer genius. And the soups! Dear god. I cannot wait to try some of these. Bonus: there are salad, cookie, and other non-soupy recipes in the back.

The soup du jour at the Hopvine Pub could be Crab Bisque, Cold Strawberry, Moroccan Lentil, or Nigerian Yam. If it has warmed the hearts and touched the souls of the pub's trendy patrons, it's in this overflowing recipe book categorized by seasons. Chef Michael Congdon takes soup lovers from spring to winter with inspired combinations: Curried Avocado; Fuji Apple and Gorgonzola; and Cauliflower with Pancetta and Orange are just a few. He infuses even the basics (French Onion, Potato Leek, Minestrone) with his fresh, innovative style. Also included are recipes for accompanying sandwiches (Smoked Gouda and Marinated Artichoke), salads (Spring Fruit Salad with Wasabi Lime Vinaigrette), and desserts (Uber Brownies).

50 Chowders: One Pot Meals - Clam, Corn, & Beyond Review

50 Chowders: One Pot Meals - Clam, Corn, and Beyond
Average Reviews:

(More customer reviews)
I first have to let you know my own bias(es): I read cookbooks like some folks read novels, but when it "comes down to it" what I truly appreciate is a book with plenty of recipes that sound delicious, and that I can actually prepare at home.
OK - here's another bias - I love chowders. I love eating them, cooking, smelling them, etc.
This is a good scholarly book on chowders. It begins with a history of chowders in Northeastern America from 1700 up to 2000 when the author tells us "50 CHOWDERS by Jasper White, the first hardcover book of contemporary chowders, is published".
The author doesn't hide his biases: Jasper White is a proud Northeastern American and believes chowders have been and remain an integral part of the Northeast American (this includes Canada) diet and culture since the 1700's.
This is a book to please lots of people because the recipes sound yummy and do-able for the most part. Most focus on clams, shellfish and fish in general. There are some veg. chowders as well - leaning heavily toward corn. There are also recipes for accompaniments - breads, fritters - not many, though - also leaning mostly toward corn. (OK by me, I love corn).
There's a lot of information here, which I appreciate. This isn't an open a can of this and that, instead it's very thoughtfully put together. As with most worthwhile cookbooks, Jasper White focuses on the importance of the very best ingredients to achieve the very best product(s). You can learn about various types of clams, shellfish, fish, broths, with some interesting history thrown in...
I like it.

What a great book! I am making the meat dishes every weekend for the past month or so, and I haven't been disappointed yet. The "Pub Ribs" dish is simply great when paired with the Chedder Mash Potatoes dish, also found in the book. Just delicious so far! Unlike many cook books that seem to go out of their way to be overly complex, the ingredients and preparation techniques are very straight-forward.

Remember those tantalizing smells coming from Grandma's kitchen as she made her treasured, slow-cooked meals? Braises and Stews brings modern convenience and style to good old-fashioned comfort food. Organized by mainingredient, this handy cookbook dishes up the secrets for making such savory one-pot meals as Classic Pot Roast or Pub Short Ribs. Lighter fare like Coq au Vin prepared with white wine or a Roman-inspired Spring Stew of Favas, Artichokes, and Fresh Peas will appeal to those with smaller appetites. I am a longtime fan of cookbook author Clifford A. Wright, and was delighted to get a copy of his latest, "Real Stew." Perfect just as the weather starts coming on cold, this cookbook makes wonderful leisure-time reading and is chock-full of terrific recipes to boot.
Wright has set an ambitious agenda for himself here, including stews from all over the world. Hungarian Paprikash is here, as is Spicy Indian Eggplant Stew, Bedouin Lamb and Mushroom Stew, Swedish Sailor's Beef Stew, and more. I can't find one that doesn't come across as utterly mouthwatering. Stew is comfort food at its most primal, of course, and Wright gets down and dirty and primal with the ingredients. You'll find stews here calling for rabbit, for instance, and he even gives a brief overview of a Canadian specialty called Assiniboin Bear Stew (which he cautions you not to make unless you're prepared to marinate the bear meat in either wine or vinegar). Of course there are plenty of fish and shellfish stews as well.
Beautiful graphic design, numbered directions (in my view, a must for when the cook must look away for a moment), and easy-to-assemble ingredient lists help to make Wright's "Real Stew" a real winner for both beginner and experienced cooks.

I've loaned The Secrets of Jesuit Soupmaking more times than I can count, and everyone who's borrowed it ended up buying their own copy. That's the highest praise I can lend this wonderful book!

In his early years as a novice, Brother Rick Curry learned that the quickest route to popularity among his peers was to master the art of cooking. Soup is one of the staple foods in a Jesuit community, and there is almost always a pot simmering on the stove. In more than forty years as a Jesuit brother, Brother Curry has traveled the world, lived in many different communities, and prepared many, many pots of soup. This collection includes recipes for sixty of his most popular soups-everything from an exotic Roasted Red Pepper Soup to the classic Minestrone Milanese to a hearty Corn Chowder, from a relatively simple chicken soup to the more complex Mussels Soup Billy-bi. But Brother Curry writes about a great deal more than soup. He includes stories to savor about his life in the community of Jesuits: the people he's met; the meals he's enjoyed; and the daily practices of patience, reverence, humility, and care that go into making a good soup and a good life.

We sure agree with the other comment about lousy editing. All three of the recipes that we tried had steps omitted. In the Wild Mushroom Soup you reconstitute the dried mushrooms, and add their water, but never actually put the mushrooms in.
In the introduction, they stress to never run the stovetop heat above medium on an enameled dutch oven, but then the recipe says "bring to boil over medium-high heat.
There are some recipes that look good, but we'll double-check them on the Internet before trying them. We were really hoping this would be a great cookbook, but are very disappointed with it. We'll shopping for a replacement.

The Everything Soup, Stew, and Chili Cookbook (Everything (Cooking))

Well, she's done it again. Belinda Hulin's Everything Soup, Stew & Chili cookbook is a must for the serious or not so serious cook. I was sold when I read the first chapter, and I hadn't even gotten to the recipes yet! In it she covers a multitude of helpful and fascinating topics, beginning with the evolution of soups and stews and ending with cautions on safety.
None of my adventures begin or end in the kitchen. I don't like to spend a lot of time preparing meals, but I do love to eat, and Ms. Hulin's Soup, Stew & Chili cookbook satisfies all my requirements.
The book is laid out in a simple, easy-to-understand manner. A quick glance to the left column gives you the ingredients with no nonsense instructions on the right for putting everything together to produce dishes welcome on any table.
I can hardly believe I actually made little pork pies. Delicious pork pies, I might add, and her history and directions for making Cincinnati chili have done nothing if they haven't improved my marriage to a true blue Cincinnati native. All these years I've heard about Cincinnati chili and now I can make it not one, not two, but five ways!
I can't recommend the book too highly, even to those more adventurous in the kitchen than I.

The books claims to have easy soup and stew recipes. It delivers just that. The index is well organized by the ingredients and cooking method and I like the variety of recipes. For example, I was looking for a black bean soup recipe. There are several listed depending on taste preferences. Also, there are recipes that use dry black beans and others use canned black beans. With 365 recipes there are sure to be plenty to please all preferences and palates. The recipes certainly aren't gourmet, but why would anybody expect that out of a book with the title "Easy Soups & Stews"?

The Best Soups and Stews (Best Recipe)

My favorite cookbook is The New Best Recipe from America's Test Kitchen. My husband loves soup, so when I saw this cookbook from my favorite cookbook writers, I snatched it up. I was disappointed to discover a lot of the same recipes that I already have in The New Best Recipe's chapter on soup. Still, it's a great cookbook on its own merits.

What's the secret to great chicken stock? Which cut of meat makes the best beef stew? What's the best way to thicken New England clam chowder? Do you really need to soak black beans before making soup? In an exhaustive effort to answer these and many more questions, the test kitchen simmered more than 6,000 pots of soup and stew. The result is this definitive collection of more than 200 recipes covering just about every soup and stew imaginable. Choose from perennial favorites such as Manhattan clam chowder, cream of tomato soup, Cincinnati chili, and beef barley soup or international recipes such as hot-and-sour soup, borscht, and miso soup. The Best Soups and Stews also contains 200 illustrations that show you how to cut up a chicken, defat stock, shape matzo balls, mince ginger, and much more. No-nonsense equipment ratings and taste tests of supermarket ingredients are also included. Find out which supermarket chicken broth received our highest rating, which blender turns out the smoothest pureed soups, and which pot is best for making stews. With this book at your side, we guarantee that you will never turn out a bland pot of soup or a greasy stew with tough stringy meat—in fact, cooking favorite and new recipes will be easy and foolproof. What separates great corn chowder from the pack? For deep corn flavor, grate ears of corn to create a thick pulp bursting with fresh corn flavor, then add whole kernels at the last minute. And for richness and smoky flavor, sauté salt pork and leave it in the chowder as it simmers. What is the secret to rich-tasting beef stew?First, use beef chuck and cut your own stew meat (for consistency of texture and flavor); then skip the flouring step—floured meat gives stew a weak, less beefy flavor. And for the perfect texture overall, cook the stew in the oven after browning the meat and add the vegetables in stages. How do you make the ultimate French Onion soup? The best French onion soup starts with caramelized red onions (they have the most intense sweetness and complexity of flavor) and two types of broth—chicken and beef broth. And for the perfect cheesy crust, use Asiago for flavor and Swiss for meltability. How do you make great chicken cacciatore?Start with skin-on, bone-in chicken thighs for the deepest flavor, then discard the skin after the initial sauté to prevent the stew from becoming greasy. Add portobellos for earthy flavor and build a robust sauce with red wine and a Parmesan rind.

Soup Bible Review

Soup Bible
Average Reviews:

The Soup Bible is a wonderful collection of soup recipes divided into six sections: light & refreshing, rich & creamy, warming winter, hearty lunch, one-pot-meals, and special occasion. The variety is excellent, and there are soups from around the world. The front section on making stocks is very helpful as it includes not only the standard vegetable, chicken and meat stocks, but also fish stock and stocks for Chinese and Japanese cooking.
Each recipe comes with beautiful end-result pictures as well as pictures of some of the steps involved. The directions are clear and simple. Many of the recipes come with suggestions for variations and all of the vegetarian selections are marked. Most of the soups use easy-to-find ingredients, but the exceptions often have tips on where to find the unfamiliar items.
I've tried several of the recipes with no problems and delicious results. One of my personal favorites is the Tomato and Blue Cheese Soup. I'm looking forward to cooking and eating my way through these soups.

Good & Garlicky, Thick & Hearty, Soul-Satisfying, More-Than-Minestrone Italian Soup Cookbook Review

Good and Garlicky, Thick and Hearty, Soul-Satisfying, More-Than-Minestrone Italian Soup Cookbook
Average Reviews:

(More customer reviews)
Any excuse to buy another soup cookbook is a good one for me. The large words "Italian Soup" written across the cover was all it took for this one to end up in my shopping bag. Recipes range from amazingly simple to time consuming but worth the work. These are recipes that you'd expect to have passed down lovingly, with each recipient making it their own along the way.
There are no pictures in this cookbook but the descriptions do the recipes justice all on their own. Each recipe is listed by its English name, its Italian name shown underneath. Chapter titles, listed English over Italian, appear only in Italian on each page header. For visuals, a decorative green strip borders the page edges and there are drawings done in orange interspersed throughout. A very well done index is also provided at the end of the cookbook.
The "Sautéed Asparagus Soup" is a super simple soup that contains so few ingredients you wonder how it could possibly be any good. But it is! I found myself making it whenever I was short on time and ideas. Like most soups, it reheats well and tastes even better the next day. For the most part, soups contained here can be made in under an hour (after preparation of ingredients).
"Pasta and Beans with Fennel and Sausage" is great when company's coming and you don't want to have to fix a lot of food. A nice salad served along side this rich and filling soup and you'll elicit compliments and requests for seconds.
Soup is typical considered a great food for dieters though with these recipes, I would suggest going over the ingredients lists carefully. Many ask for a good helping of cheese in or on top of. Some use bread, rice, or potatoes as thickeners, the meat-based soups use fairly fatty meats, and butter is used most often to cook in.
If you are looking for meal type soups, miss your grandmother's Old Country cooking, or just enjoy soups like I do, this is a not to be missed cookbook. You can turn to any page and feel comfortable that the results will be fantastic.

Vegan Soups and Hearty Stews for All Seasons Review

Vegan Soups and Hearty Stews for All Seasons
Average Reviews:

(More customer reviews)
Vegan Soups and Hearty Stews for All Seasons is the fourth edition of Nava's book previously titled Vegetarian Soups for All Seasons. It is essentially the same book as the third edition, but with the color photos added along with the new cover. It is substantially different from the first two editions.
I am a total soup nut so I was very excited to try this one. I hadn't seen any of the previous editions but I'm a big fan of Nava's other cookbooks. This certainly lived up to my expectations. Like all of Nava's cookbooks, the recipes in this book were easy to make, used simple ingredients that I typically have in my pantry, and, most importantly, my family loved them.
The recipes are arranged by seasons, which is a really nice feature since we try to eat local, seasonal foods. It being January when I got the book, I turned straight to the winter soups and found several just perfect for a rainy winter suppers. The first soup I tried was the Three Bean Soup with Brown Rice. Well, actually it was only two bean soup (kidney and cannellini) because I didn't have any frozen green beans. I did have kale though so we still got the green in there. My daughters had bowl after bowl of this hearty tomato-based soup and I ended up with no leftovers for lunch the next day.
The second soup we tried was the Hearty Winter Roots Soup. This was a wonderful mash of potatoes, carrots, rutabagas, and parsnips in a creamy, cheesy soup. Another hit with the family. The third dish we tried was the Vegetarian Goulash--a great "meat" (seitan) and potatoes stew that reminded me of the Sunday dinners my mom made when I was growing up--except without the meat of course.
I can't wait to cook my way through the rest of the seasons. This spring, I'm looking forward to Asparagus and Spinach Soup, Leek and Mushroom Bisque, and Puree of Spring Greens. In the heat of the summer, I can try one of the many cold soups offered like Cream of Lettuce Soup, Classic Gazpacho, or Minted Peach Soup. Next fall (if I can wait that long), I'm dying to try the Baked Onion Soup, New England Clam-less Chowder, and Pumpkin-Apple Soup. In addition to soups, there's a lovely selection of breads, muffins, biscuits and scones. My daughters and I had a blast making Chapatis.
If you love soup or are looking for each meals for your family, this is definitely a good cookbook for you.
