M.F.K. Fisher was a superb writer. And she lived in "interesting times" in Europe and California. How to Cook a Wolf pitted her inate love of food and cuisine against some severe times when money might be short or food was rationed. Her strange sense of humor and practical outlook are interesting; for example, she gives a recipe for a sludge to keep body (if not soul) alive. The instructions begin with borrowing 50 cents to buy the ingredients; hamburger, wilted vegetables. The resulting mush can be used as a nutritious dog food, or a staple to survive on. She even claims it can be quite acceptable fried as scrapple, but then you'd have to have some cooking fat (and even that could be hard to come by.)
In these times of plenty, it's hard to relate to this book except to read Fisher's ideas and fantastic prose; the section on "Sue" (really California artist and etcher Nel Coover) who survived and entertained her guests with wild ice plants, seaweed and stolen eggs and potatoes is captivating.
If you have never read any M.F.K. Fisher, start with "The Measure of My Powers", but if you have read her, and if you have developed a taste for her marvelous writing, this is one of her famous works that is unique and interesting.

Written to inspire courage in those daunted by wartimes shortages, How to Cook a Wolf continues to rally cooks during times of plenty, reminding them that providing sustenance requires more than putting food on the table. M. F. K. Fisher knew that the last thing hungry people needed were hints on cutting back and making do. Instead, she gives her readers license to dream, to experiment, to construct adventurous and delicious meals as a bulwark against a dreary, meager present. Her fine prose provides reason in itself to draw our chairs close to the hearth; we can still enjoy her company and her exhortations to celebrate life by eating well.

I would never have bought this book if a friend hadn't insisted that I sit down and read at least the first chapter. I like to eat food, not read about it. But Jeffrey Steingarten is a riveting, funny, argumentative, bloshy, emphatic writer. I laughed my way through this. I bought a copy for myself, then went back for two more to give as gifts. A surprising treat. In the beginning Steingarten writes about how he ate his way all the foods he had convinced himself he was repulsed by. And found some of them surprisingly good (others revolting). I would have argued that a book about food by the food critic for Vogue could only be a stuffy, pompous self-satisfied piece of writing. I was wrong, wrong, wrong. If Steingarten was an item of food I'd convinced myself I couldn't possibly like, I must now go back on myself and say, love it, DELICIOUS.

This book is almost as good as actually trailing Amelia around the Santa Monica market to learn what's in peak season, and to be introduced to the farmers that grew it. Amelia's recipes are simple and direct; even fledgling cooks can use them with great success. I'd eat anything that Amelia's cooked! Read this book; you will learn a lot about all sorts of interesting, delicious things.

`Spice, Flavors of the Eastern Mediterranean' by New England chef, Ana Sortum is, behind its façade of being a text on spices and herbs, is really a restaurant cookbook, but done in such an imaginative way that one immediately forgives this little subterfuge. All the recipes are from Ms. Sortum's current restaurant, Oleana or from her previous postings, before starting out on her own and almost immediately winning the James Beard award for best chef in the Northeast.
One thing which immediately impresses me about Ms. Sortum, even before reading any recipes, is that she gives ample acknowledgments to four of the leading writers on Mediterranean cuisine, Paula Wolfert, Nancy Harmon Jenkins, Clifford Wright, and Claudia Roden. She has amply repaid all her gratitude to these sages by giving us a book whereby the casual foodie can really appreciate important tastes of the Eastern Mediterranean without wading through, for example, Clifford Wright's monumental study of Mediterranean cuisine.
A second thing which impresses me early in my reading is that the author, assisted by ghost writer Nicole Chaison, cites Internet sources for important ingredients directly in the text, rather than having you flip to the back of the book. A minor note worth pointing out is that this is the first cookbook in which I have seen our beloved [...] as a source for cited foodstuffs.
A last bit of ephemera to note is that this is an exceptionally well designed book. While there are few color photographs, the warm tans and browns of the fonts, paper, and sidebars, with the old-fashioned ornamentation is the kind of care I usually see from only from Alfred A. Knopf cookbooks. Congrats to Harper Collins for the great window dressing which makes reading the book just a bit more satisfying.
By far the most interesting thing which sets this book apart from all other restaurant books I have reviewed is that the recipe chapters are organized by collections of spices, grouping together in a chapter those spices which often appear together in Eastern Mediterranean cooking. While most of these spices and herbs are pretty familiar to those of us who routinely work the French, Italian, and Spanish cuisines, there are several which are never found in Western European cooking, or in Far Eastern cooking either. The most important of these are Sumac, Aleppo pepper, Urfa, Nigella seeds, Fenugreek, Za'atar, and Jasmine.
The twelve (12) groups of three, four, five, or six flavors are divided into six spice combinations and six `herbs and other flavors. The seven (7) spice combinations are:
Cumin, coriander, and cardamom
Saffron, Ginger, and Vanilla
Sumac, Ditrus, and Fennel Seed
Allspice, Cinnamon, and Nutmeg
Aleppo Chile, Urfa, and Paprika
Poppy seeds, Nigella seeds, and Sesame seeds
Curry Powder, Turmeric, and Fenugreek
The five (5) other flavor combinations are:
Dried Mint, Oregano, and Za'atar
Fresh Parsley, Mint, Dill, and Sweet Basil
Oregano, Summer Savory, Sage, Rosemary, and Thyme
Flowers: Nasturtium, Orange Blossom, Rose, Chamomile, Lavender, and Jasmine
Nuts, Yogurt, and Cheese
The grouping that may be most familiar to us is the third, the family of `cookie spices', allspice, cinnamon, and nutmeg; however, the author does not limit herself to recipes familiar to us. Most of the recipes even in this chapter are savory rather than sweet. But even the sweet recipes are pure Eastern Mediterranean, such as baklava.
In addition to the featured spices, there are several other distinctly Eastern Mediterranean ingredients used, such as tamarind, pomegranate molasses, Grano, Yufka dough, Greek yogurt, and Basturma. Even when Ms. Sortum colors outside the lines a bit and gives us a western Mediterranean dish, the Moroccan Bisteeya, she calls for genuine ethnic makings, in this case, brik pastry (Oddly, Paula Wolfert says brik is a Tunisian and not a Moroccan dish) but the author assures us the dish can quite successfully be made with phyllo dough sheets.
Speaking of the Bisteeya recipe, this is the only case where the author (or her design and illustration team) has made a misstep. I only consider pictures in a cookbook really important when they are presented to illustrate a technique, and here, the pictures must agree perfectly with the text. Yet, where Ms Sortum calls for a pie plate in her text, the picture shows the procedure being done with a straight-sided cake pan and not a sloping sided pie dish. My biggest problem with this is that I suspect the author actually uses the cake pans when the dish is made at her restaurant.
Otherwise, the descriptions of the recipes are really superior. In fact, sometimes, as a reasonably knowledgeable amateur cook, I feel the procedures are actually just a bit too detailed, and detailed in the direction of using restaurant kitchen techniques. For example, cooked potatoes are `mashed' for potato dough in the food processor, where I believe the home cook would do just as well with their potato master or even better, and a potato ricer. To be sure, the processor is probably used because other ingredients are mixed in later, but I see no special need for the heavy-duty equipment here.
There are a few other little quirks here and there, such as the recipe for aioli that uses bland canola oil rather than the very Mediterranean olive oil (I will forgive Ms. Sortum here, because aioli is a Provincial preparation and the Larousse Gastronomique does NOT specify olive oil. The defining ingredient is the garlic. On the other side of the coin, the author gives us the great gift of lemon aioli, a very Mediterranean notion indeed!
The recipes are a great mix of main course dishes, sauces, condiments, side dishes, appetizers, and desserts. This is a great source for cooking, but its even greater pleasure starts off as a great foodie read, light, but very illuminating.

Culinary bad boy Tony Bourdain and his Les Halles owner chefs have written a very, very good cookbook. If you have an ounce of interest in reading good cookbooks, stop reading this and go to the top of the page and order yourself a copy.
If you are still here, I will tell you that this is an excellent cookbook:
1. Tony Bourdain is a very good writer. That means reading this book is very entertaining and worth the price even if you make none of the recipes. There are hundreds of good cookbooks, but Bourdain joins the very select rank, along with Alton Brown and Wayne Harley Brachman of culinary writers who can have you laughing out loud. It also means that he knows how to put things so you understand them and remember them.
2. The book is all about demystifying classic Bistro cooking and in convincing you that with the right attitude and the right directions, you can do as well or better than any newbie professional cook entering Tony's kitchen to work for the first time. Bourdain lays out the reality of this cuisine in a way I have never seen before. If you ever had any reservations about whether you wanted to cook or had the aptitude to cook, this is the book for you.
3. The book presents excellent directions for doing most of the basic preparations for bistro dishes, with special emphasis on preparing stocks. I even think Tony sells himself short when he says that if a chef used his directions at one of Thomas Keller's restaurants, he would be fired on the spot. I personally find Bourdain's stockmaking recipes as good or better than any I have seen short of the CIA textbook. All the right steps are there and all the right culinary reasons for doing them are there.
4. The book explains some kitchen techniques and ways of thinking that I have simply never seen anywhere else explained so well. Recipes for dishes such as bouillabaisse and cassoulet which in most other books seem to be daunting projects are broken down into realistic steps which make them entirely manageable. This is the only place I have seen the very logical distinction between `deep prep' and `prep'. Deep prep is the type of work Beetle Bailey does when he is on KP duty. It is distinctly unskilled labor. Prep work requires culinary training and involves making stocks, glazes, compotes, and the like, and work that requires trained knife skills.
5. The book gives us excellent recipes for all and only classic bistro cooking with wonderfully informative comments and instructions. (I am especially grateful that Bourdain gives both English and Metric measurements for all ingredients. The French, after all, cook entirely in metric.) There is no filler here. There are no recipes which would be more at home in a book by Mario Batali or Ming Tsai. It also means that if you have two or three good French books on `cuisine bourgeois', you will probably already have recipes for many of the dishes presented in this book. But, this book is so entertaining and the recipes are so well written I would not let this give you any pause. Buy it anyway.
6. The book does not make itself out as the wisdom of a single mind. Culinary skill is highly social, done in a world full of influences and people to influence. Bourdain is generous with his being clear about the people and institutions to whom he owes his culinary skill, with special mention being given to Jacques Pepin. Yet, Bourdain has absolutely nothing about which to be modest. He has given us a major addition to useful culinary literature.
Aside from excellent chapters on general principles and glossaries, the chapters are almost all the same you will find in any good English language book of French recipes. These are:
Soups, including excellent comments on which preparations improve with age and which DO NOT!
Salads, including a surprising method for preparing lardons. Boiled, not fried.
Appetizers, especially gratins, snails, and mussels.
Fish and shellfish: Lobster and dry scallops and pike, oh my!
Beef, of course. Note the very important notes on how the French cut up the cow different from us Yanks.
Veal and Lamb. The lamb stew recipe is especially good. Baaaaaa.
Pig, from nose to tail. Bourdain is a great fan of Fergus Henderson and of using everything but the oink.
Poultry and Game, roasted, braised, and rolled chicken, duck, and pheasant.
The big Classics. You know the ones.
Blood and Guts. Recipes for `the fifth quarter' of organ meats.
Potatoes. I love a book that puts potato recipes in a special chapter. Way to go Tony.
Desserts. Everything you expect. Crème Brule, poached pears in wine, and clafoutis.
Even the trivial stuff is done right. The recipe titles are BIG. The recipe text is done in a very easily readable font. The binding is especially well made to take a lot of standing open while you prepare dishes from the recipes. The book is so well put together, I am surprised it was not published by Knopf , Scribners, or Harper Collins. The closest recent book to this volume is from the chefs at Balthazar, also in New York City. This book beats out that effort by a mile. My only complaint that this book shares with the Balthazar book is that some recipes are in French and some in English. Why not consistently give both?
This book is not a classic like Julia Child's `Mastering the Art of French Cooking' or James Peterson's `Sauces', but, I have read several of Bourdain's references by Robuchon and Bocuse on French cuisine and I would recommend Bourdain over these luminaries for the clarity and fun in his writing.
Very highly recommended for both clear recipes of popular dishes and the great support he gives to the confidence of the amateur cook.

While this book on it's own does not complete a cooks library of Italian Cuisine, on the other hand, it does contain the proper approach to the myteries, simpicities and charm of Italian food, all on it's own. The descriptions are very thourough due to it's 1950's audience who may have never heard of Risotto, Gorgonzola, Prosciutto, Gelato, or even olive oil for that matter! However, she writes so comfortably and calm that you can almost picture her leaning against the stovetop. Her book is better than probably 90% of what is out today. Since the cuisine hasn't changed (much), this book is even more useful today than the 1950's, because, now we can taste the ingredients she writes so lovingly about. I often find myself looking up something and end up wandering through other musings she weaves. The artwork is great too, I especially love the painting of The Pasta Eater.
ITALIAN FOOD by Elizabeth David, combined with the works of Waverly Root, Carlo Middione, and Anna Tasca Lanza should be enough to grant anyone Italian citizenship (or at least drooling for it).
