Not all that long ago I reviewed Ms. Fosburgh's Soups & Stews for Fall and Winter Days. Like that book, Ms. Fosburgh provides hints for adapting recipes to young palates. The layout of recipes is clear and easy to make sense of. The recipes themselves are easy to make---these aren't fancy hours-long affairs that'll have you slaving over a stove. Which is good, seeing as these are meant to be dishes suitable for serving over the warm days of Spring and Summer.
Again, however, we found the tastes to be somewhat unbalanced. For instance, there's a brown rice salad in here that has, as its major flavor-providing ingredient, a quarter cup of lemon juice, and that's just about all you can taste in the end product.
On the whole I found more to enjoy in this book than in the previous. The macaroni Creole salad, for example, is quite delicious, as are the corny stuffed tomatoes. There's a soup made with a little cheese and some jalapeno that has a perfectly balanced set of flavors.
These books are best for people who are a bit experienced in the kitchen and willing to mess with the seasonings here and there to re-balance the flavors. However, the cold salads & light soups in this book are certainly good, and very handy to have around.

I did not anticipate using this book very much, and purchased it intending to use one recipe I was familiar with and wanted. I ended up using nearly every recipe in the book. I have come to understand the artistry of cooking by studying the different uses of flavor and textures in this book. Whats even more appealing is that CPK donates all their proceeds from the book to charities. I would say the only downfall is that most recipes require planning (making the sauce the day before, stocking the oriental vegetable in the refrigerator, or cooking the chicken beforehand) I would definately say the final dishes are worth the preparation. This is especially a great book if you are interested in expanding the type of cuisine you eat (ie getting away from casseroles, chicken, mashed potatoes, the old standards) and eating more intersting and exotic foods, especially vegetables.

I cook often, but I own very few cookbooks. I get tired of buying cookbooks and finding only a few recipes worth making. This book is definitely an exception. Every recipe I've tried has been terrific, and there are so many others I'd like to try, I've decided to give the library back their copy and purchase my own. The biggest plus for me is that the recipes are all very healthy and the menus are well-balanced. Yes, he uses butter and cream in some recipes, but he balances them with amazing whole grain breads and large amounts of vegetables and fruits in the soups as well as the salads. What impresses me the most is that his whole grain breads taste so terrific - you'll wonder why you ever ate white bread! Best of all, the recipes make enough for leftovers, but not so much that you're eating soup all week. Best Bets: the Split Pea soup menu is my favorite - the bread is terrific and the split pea soup is the best I've ever tasted.
